On September 29, guests gathered to celebrate Canada’s bounty at The New Farm. Oliver & Bonacini Blue Mountains’ chef, Jeremy Korten, created a menu highlighting quintessential Canadian ingredients, from local Kolapore Springs trout, Ontario lamb and vegetables straight from The New Farm, to Fogo Island Cod, presented by the folks at Fogo Island Fish.
Guests enjoyed cocktails and a hearty dinner consisting of Markdale Mushroom Quiche, Seared Royal Acres Duck and Grilled Kolapore Springs Trout hors d’ouvres, followed by an appetizer of Fogo Island Crab Salad and a main course of Mustard-Spiced Fogo Island Cod and Lamb Shoulder Crépinette served with German Butterball Potatoes, Roasted Cubed Beets and Red Russian Kale. The evening was topped off with a delightful dessert of Chocolate Decadence with sabayon and macerated blueberries. Dinner was served al fresco, perfectly paired with a selection of Creemore Springs beer and live music by Foremast Jacks.
