On Saturday, January 30th, Vancouver-based Chef Vikram Vij and Oliver & Bonacini's Chef Miheer Shete hosted this collaborative dinner at Arcadian Loft. As one of O&B's unique culinary events for Winterlicious 2016, the evening showcased traditional Indian cuisine with a modern Canadian twist.
As guests arrived at Arcadian Loft, they were welcomed with cocktails and passed canapés such as elk and foie gras samosas, lamb galoti kofta, and masala fries. Chefs Vikram and Miheer commanded the attention of their guests with a live cooking demonstration, showcasing various spices, flavours, ingredients and cooking styles.
Guests were then seated for a four-course dinner with wine, featuring dishes like a ajwaini Fogo Island cod and a smoked butter chicken pot pie. Throughout the meal, the chefs interacted with their guests, sharing their inspiration behind each course and answering a range of foodie-themed questions.
At the end of the evening, guests were given take-home recipes to try their hand at Indian cooking - the perfect way to cap off this special event!
